Cut one onions in thin slices and put one tablespoon of butter in the pan, heat at low temp. until the butter foams, increase the heat to medium and add the onions.

Cook for one minute and cover the pan, let cook for 10 more minutes approx.

You will have golden onions that are a perfect match for your veal liver orn hamburger steaks.

You still can add your crispy bacon to the dish if you wish to do so.

Recipe no 2 red onions for steaks:

1. 1 large red onion.

2. 1 tablespoon of unsalted butter.

3. 3 ounces of red wine such as Shiraz or Merlot ot Pinot noir.

4. 3 ounces of beef broth.

5. 1/2 tablespoon of seedless jelly such as redcurrant or raspberry or blackberry.

6. 1 teaspoon of fresh chopped thyme and 1/2 teaspoon exrtra for garnish.

7. 1/2 teaspoon  of coarse salt. If you use salted butter omit or do not add.

8. Ground black pepper.

9. 2 T-bone steaks 3/4 to 1 inch thick.

10. 1/2 table spoon of olive oil.

Cut onion in 1/2 and slice thinly. Heat butter in a sauce pan over medium heat until bubbly, add onions and cook, uncovered, for 10 minutes stirring frequently or until softened.

Add red wine, beef broth, jelly and thyme. Bring to a boil at medium high heat, uncovered, and then reduce heat to have mixture just bubble. Stir occasionnally for about 25 minutes or so until thick and most of the liquid has disappeared. Add salt, if you used unsalted butter, and ground pepper.

Preheat BBQ  on high, rub steaks with olive oil, sprinkle with salt and ground black pepper on both sides. Grill steaks for 4 minutes on each side for medium rare, 5 minutes for well done or more.

Transfer steaks to warm serving plate and nap with red onion sauce and garnish with thyme.

A real delight.

For wine to serve try a Cabernet sauvignon or  Pinot Noir.

Let me know your comment when you try it.

You can also cut your onions in a bowl of water and the gas released will be diluted by the water. The gas released turns into sulfuric acid when it reaches the eyes, to protect the eye from damage the glands release tears to dilute the acid.
